A few years ago when I was in Shenzhen for business, I saw muslim men (the only muslims I saw in this part of China) with bicycle carts and the back of the cart was a flat bed on which sat a large pressed cake of dried fruit. This wasn't a baked fruitcake, but a solid mass of what looked to be a variety of dried fruits pressed together. He would slice off portions for buyers as a "street food" item. Does anyone know what the name of that dried fruit cake would be and where the custom originated of selling it off the back of a bike cart? Are these carts to be found in Arab countries? Unfortunately, I didn't take a photo and I haven't been able to locate any info via web search.
