I am trying to match the texture of my muffins to the texture of muffins that I have purchased. In general, my muffins have a finer crumb and are a bit more spongy / soft than I would like. You can see the texture difference in the picture below. These are not the same muffin flavor but the picture shows the difference. My muffin is on the left and it was made with all Bob's Red Mill Whole Wheat Pastry flour. My muffin tastes good and is moist but I prefer the texture of the other muffin (on the right.) I am trying to figure out how I can get the more coarse crumb to my muffin. I am guessing that it has to do with either ingredients or maybe something with combining the dry and wet ingredients.
