Our local Ralphs had a great deal the other day: a 10 lb. wheel of genuine Manchego from Spain for only $6! (Seems the deli placed a mistaken order.) I was all over that like a Spaniard on Sangria! Now, does anyone have any recipes? I'm partial to using it w/ pastas a/o potatoes, as in a roesti or gratin, but open to all suggestions. |Salud!
