Mosaic Restaurant at 6229 River Rd Richmond, VA

I'm not reviewing Carytown Watermelon Festival this year although it was once again a great festival, but I would like to highlight one of the low-lights of the day - "Mosaic" Restaurant's booth

So often in Richmond I find that decent restaurants fail completely when attempting to translate their cuisine from brick and mortar restaurant quality to a mobile food truck.

The case is no different with "Mosaic" as they completely failed at the Carytown Watermelon Festival with their $5 grilled corn-on -the-cob w/ toppings served to the masses.

Corn is not difficult to prepare, especially by someone claiming to be a chef, but this "Grilled" corn was absolutely the worst corn I've ever tried in any form.

The corn was so over cooked not one kernel contained any moisture, was completely deflated and was worse than any over cooked microwave TV dinner corn in existence.

Let me give a simple tip to the chef, since he obviously missed "corn" day at culinary school:

If you are going to serve grilled corn, and you want to par cook for easy last minute grilling for service all day, you would boil the ears for no more than ONE minute MAX, then when an order comes you place the corn on a VERY HOT grill, rotating to all sides for no more than 1-2 minutes, then you top and serve.

What you don't do is over grill each ear, set aside all day, then over grill again to warm when an order comes in.

This is simple culinary technique that was completely ignored by the cook at Mosaic.

Festivals are a great way to to market your wares, and bring people into your restaurant by sampling cuisine that would give them an idea of what to expect should they choose to visit the actual restaurant, but if this corn was indicative of what to expect at "Mosaic", I'll take a BIG pass..

Smothering something inedible with vast and varied toppings is a trick reserved for the worst of cooks, and Mosaic indeed produced and offered their worst at this festival
