The ever-morphing eggplant salad, or using up what's around

I've been stuck at home all day while contractors are doing a repair on our house.

Didn't have a plan for dinner but had all day to use up some of the stuff in the fridge so started nosing around to see what was in there...

Found an eggplant I'd forgotten I bought over the weekend.

Decided to roast it off as I had a loaf of bread in the oven and could take advantage of it being on.

Once it was out didn't really have a plan but decided to toss it with some olive oil, lemon, mint and basil figuring it would be a decent side with whatever I ended up making for dinner.

Spied one last tomato on the counter...why not diced it up and tossed it in too.

A while later spied the feta in the fridge, sure that would be good too...

Decided on some oven fried chicken breast for dinner as I needed to use up some buttermilk as well(also making lemon buttermilk sherbert with that...with some blackberries tossed in cuz they also were sitting there smiling at me in the fridge),

Didn't want to make a second side with the chicken so decided to cook off some quinoa and tossed that with the eggplant mixture.

My basic roast eggplant I started with ended up being a pretty tasty salad that we'll have at room temp.

Hope the husband agrees it's pretty tasty. He'll be amazed when I tell him it took all day to make! :-) ( actually I still have a couple hours til dinner...could morph some more still!)
