I am so frustrated! Strange things happened to my (now garbage) truffles. First the mixture I made separated into a globby mess, with an oily/watery film on top, and the second I made was like hard sand. I'm only using unsweetend chocolate, powdered sugar, egg yolks, and vanilla. What's the chemical problem??
