I think a lot of people who are going to Morimoto are going with the wrong expectations.
The reality of the restaurant business is
1. It is impossible to spontaneously do iron chef food to suit every customers whims and just stock ingredients for that purpose. Your food cost will be 45% and your restaurant will close.
2. The dining public needs to stop treating restaurants like theatres and maybe they will have a good time.
Sushi chefs are at work you are out to dinner. they are not comedians to entertain you, they actually have to cook for you and a hundred other people. every minute they stop to chat with you means other people pissed off because they are waiting for thier sushi.
3. I dont think "philly bashing" by claiming "most of the people at morimoto know nothing about sushi is a fair asessment unless one is a clairvoyant sociologist.
4. and the big point is.......and think about this....
It is not a JAPANESE restaurant it is a STEPHEN STARR restaurant. You will never get good sushi in a restaurant that is not japanese owned. If anyone knows of any such place I would like to hear it.
