A hunter friend of mine in Montana sent me a care package of moose, antelope, elk, and deer meat, as well as some malliards and Canada geese. He told me to cook them as I would any other meat, but since he's no cook, I don't believe him. Isn't wild game lower in fat? Shouldn't I handle them a bit more carefully? I'd appreciate any advice regarding cooking them as burgers, steaks, or braises, or BBQ. TIA!
