Montreal Restaurant Wish List

I have the option of choosing the annual restaurant in Montreal area. Must be within an hour of Montreal. I have a few noted but need help making a decision. Cannot be fish centric (so no Milos or Serpent or Filet), not vegetarian either. We've done Joe Beef, Moishes, Pied de cochon, Tapas 24 (which was amazing), Deville's Diner. I'd like to keep it high end but witought the stuffiness. There are so far what I've come up with ($ not an issue):
