A month in Florence, tea shops, groceries and dining out?

I will be attending a field school in Florence for the month of May. Followed by 4 days each in Switzerland, Paris, Amsterdam and London.

I will have an apartment, and am looking forward to cooking with local ingredients, as well as dining out. I do not yet know where the apartment will be (the field school books them), but am looking for information about where to shop. Are there farmer's markets in Florence? Where can I buy good quality loose leaf tea? Where to buy a birthday cake?

My budget will only stretch to a few fine dining experiences in Florence and probably one each in the other places, I would rather stay longer and eat cheaper. So suggestions for cheap but good meals are appreciated too.
