I lived in the mid-west for several years where most of the ethnic food is terrible. One idea that had started to catch on, however, as I left, was the Mongolian BBQ. Each person picks from a selection of raw sliced meat, raw cut vegetables, and lots of different kinds of sauces from a salad bar type arrangement and takes the ingredients to a huge flat grill. There, the chefs will stir-fry your creation with these 3-foot long sticks, cooking and tapping out a funky rhythm at the same time. If you tip them in advance, they'll make a show of finishing the dish, sometimes spooning all of your dinner into your bowl, leaving a morsel or two on the end of their stick. With a tap of their hand on the end of the stick, they'll flip the morsel into the air and catch it in your bowl. You then return to your table and chow down your creation with a bowl of steamed rice. Great food and great entertainment!
