Has anyone made any of the Momofuku cakes? I'm intrigued by the pistachio one, but it looks labor-intensive so I'd like a recommendation before I jump in. I've got all the ingredients, altho going to use corn syrup instead of glucose. Also, going to use this recipe, the rectangle, just because I don't have the proper round baking equipment. Any comments appreciated.
I may start out by just making some of the milk crumbs. Apparently, you can mix them into any cookie dough, and I'd like to find out what exactly they bring to the party.
