Momofuku once agaain

Diner on 8th | Apr 14, 2005 09:12 PM

I really did not like Momofuku's ramen back in November (see link to Nov post below). Have been back several times since, but only for the small dishes. Following the rave review in NYT on Wed (' of EV's best new restaurants.'), I decided to give the ramen another try.

Well, while the ramen has improved a bit, it was still not up to par with many other places. Also some other items seem to have gone downhill.

The ramen in the signature Momofuku ramen was definitely less mushy than my first try. But still too doughy and lifeless. The broth was very bland and lacked complexity. Sadly, the Berkshire pork slices that I really liked last time lacked flavor this time, and were falling apart in the bowl. The only good thing was the poached egg.

My favorite dish in Momofuku is the fried dumplings, but this time I ordered steamed instead. They were still good, but the sauce they were served in was too salty. Probably better to put the sauce on the side.

The spicy smoked chicken wings were a hugh letdown. Dry and tough, no smokiness at all. The sauce was pretty lame. Very disappointing.

I hope the review is right, that David Chang will continue to improve things. For now I will continue to get the fried dumplings and pork buns, but stay away from the ramen.
