Mom isn't eating well any suggestions?

Mom is in her early 80s, recently had a minor accident, and is having some difficulty breathing. X-rays on her ribs and lungs have not been conclusive, but she does have COPD.

She has been a fairly light eat her for sometime now, after all life of dieting, but since the accident, she will take one or two bites of something and proclaim herself full, and if she eats anymore she feels sick. Her doctor says to just encourage her to eat. Any suggestions for such encouragement, or meal/food ideas would be more than welcome. Not saying will follow any of the ideas, but would sure like to see what people have to suggest. By the way, she likes most foods, she is not picky eater, she just doesn't want to eat at all.
