Molecular Gastronomy Recommendations

I am hoping to find recommendations for a Manhattan restaurant that does molecular gastronomy. My gf and I will be arriving in New York on Saturday, but we're looking for a place on Sunday. I am hoping for something under $125 per person without wine pairings or $200 including pairings - but I am open to paying more if it's exceptional. We have no dietary restrictions. My sister used to live in New York, but she is more about lounges, and has recommended Jean-Georges as a restaurant, he's got so many restaurants, I don't even know where to start. I am from Toronto, and even though our restaurant scene is up-and-coming, New York's scene does leave me in awe at times.

I was also looking for places to have afternoon tea, and a nice lounge for after dinner. I was recommended 230 Fifth as a place to get drinks on Sunday.
