My wife and I did the Trio Tour de Force this weekend. I won't both commenting, as its been heavily discussed here (We loved it). Afterward, however, I asked and was allowed to tour the kitchen. A very young looking guy came up and said hello. It was Chef Achatz, but I didn't know that and assumed, because he looked about 19, that he was an assistant. I asked him politely which dishes he worked on, to which he rather modestly said all of them. By this time my wife alerted my to who we were chatting with. Blame it on all those wonderful wines.
My favorite line from the evening concerned the dessert that you suck out of a glass tube (it tastes fabulous). After telling us how to do it, the waiter, perhaps seeing some lack of comprehension, and perhaps sizing up our generation, said "Basically, it's like a bong." This, of course, was no help to me :)!
