I'm from Sydney Australia and was interested in hearing your thoughts on your favourite "modernised sushi" in SF Bay Area.
What I mean by this is sushi that has been somewhat modernised with their ingredients and preparation (eg. mayonnaise, searing with blowtorch, tempura frying the whole roll) but is still grounded in traditional Japanese technique (eg. using proper vinegared sushi rice). An example of this would be Sushi A Go Go at the Farmer's Market. I've also attached a few sample pictures of what I mean.
I go to Japan on a regular basis and I've eaten at some of the best sushi-yas there so I'm not interested in the traditional sushi or omakase style sushi bars.
