The link below has events where you can find the Catfish Truck. They also have a sort of permanent home on San Pablo Avenue in Richmond on Thursday, Friday and Saturday.
The delicate fillets are coated in corn meal and cooked to order. They are almost greaseless and are crispy around the tails and outer edges. The piece I left in the fridge held the crispiness the next day. The fish itself was also fine and fresh tasting but they texture firmed up after refrigeration.
I am not a fan of catfish or cornmeal coated things, but I am a fan of this fried catfish. Orders require a little bit of a wait.
Needing to limit fried foods, I didnt try the hush puppies. Also, Ive never really had a good hush puppy yet and Im no expert in this area.
They also sell boxes of catfish and bags of seafood and poultry breading mix
The takeout menu with various combos of the above items says:
We serve only Simmons Farm Raised Catfish directly from Yazoo City, Mississippi
The catfish is farm raised and grain-fed.
