What am I missing out on at the Asian Market

I'll be heading to the Asian Grocery store tomorrow for my regular stocking of sauces, condiments, and snacks. But I'm always frustrated, feeling that I'm missing out on lots of goodies that I'm not familiar with.

Of course I get one or two soy sauces (light and dark), fish sauce, fermented black beans to add to stir frys, dried rice noodles, jarred chinese bar-b-que sauce to slather on pork loins, frozen chinese sausages, and often a curry paste.

What else is essential to fellow 'hounds, and how do you use it? I'm not so much curious about fresh ingredients (vegetables and herbs), but longer lasting things that I can pull out of the fridge or freezer, to create, complement, or at least liven up a weekday meal. Any and all suggestions would be very welcome.
