Miso Sauce Recipe for Pablo

6 Tablespoons white miso
1/3 cup sugar
1/4 cup mirin
1/4 cup sake

Boil the sake and mirin for a couple of minutes to cook off the alcohol. Then add the sugar and miso and stir unitl dissolved. Cook for a couple of more minutes until you cook off the raw taste to the sugar.

I then use this to marinate fish in. When i do black cod i marinade it for two days, then brush off and broil. I also sometimes increase the proportions to have extra lying around. I use this for quick dinners such. I usually defrost frozen slamon, slather with the miso sauce and bake until done. Now that i am thinking about it i might try some chicken thighs marinaded in miso and grilled.
