I ordered some miso from the Mitoku and forgot I was supposed to put it in the fridge. It stayed in the box it was shipped in for just over a month.
There's no mold. The miso was unpasteurized and the packaging looked essentially airtight, but it wasn't the level of sealed packaging you see in most mass produced products.
It's fermented, so I'm hoping it would be safe unless there's mold. Can it be used?
