The miraculous 24-hour brine

So yesterday I was worried about the 3 huge chicken breasts (about 2.25 lbs) sitting for 24 hrs in a brine of 4 qts water, less than a cup of kosher salt and 2/3 cup sugar.

Fearing that I ruined them beyond return, some of you chowpeeps helped me out. So I took them out, rinsed, dried them off really really really well..and didn't let them air dry in the fridge for an hour or two(i was hungry). Just let them sit with papertowels for about 30 min.

Grilled on medium for about 45 minutes, lid off and off depending on my mood, finished with curried mango grille sauce and voila - they were really really good.

This is only my second shot ever at bringing anything and i am pleased with the results, even if Cooks Illus. said not to do it for more than 8 hours.

thanks for all your help. on to leftovers for lunch!!!!!!!!!!!!! (with coconut ginger rice - box Taste of Thai - and grilled asparagus marinated lightly with Ken's Balsamic dressing...)
