Okay-my boyfriend's cousin and his cousin's wife are in town, and he invited them over for lunch. I was planning on making mussels for dinner anyway, so I'm just going to pick up 4 lbs instead of 2 and go on as planned. So, I know the main course, but I would like some ideas for the rest of the menu.
The mussels will be cooked with white wine, fennel, tomatoes, shallots, and herbs, though other suggestions would be great as well.
I was thinking of serving it with a nice mixed green salad and a citrus vinaigrette, just simple greens, nothing else.I
Now, would it be overkill to make baked potato fries AND have crusty bread for dipping?
For an appetizer, I was thinking something simple and light, especially if the main dish is so carb heavy--Gorgonzola cheese drizzled with honey on crackers.
So, what do you think? Have any ideas to make this better?
