I love Jeni's Splendid Ice Creams. Unfortunately they are getting back up after a recall and the ice cream will be available again before too long.
Luckily I do have both of her books, Jeni's Splendid Ice Cream an Jeni's Splendid Ice Cream Deserts. I was having guests to dinner on Sat. PM. and I decided to make the mint ice cream from the ice cream book. I had all of the ingredients on hand and plenty of mint from my yard. So I go to work on making the base. The young woman who cleans for me got a taste of the base before it was frozen and commented that you could tell it was made with the fresh mint because the flavor stayed with her after tasting it. The mint did have a very pronounced mint flavor.
I decided for the dinner the next day I would gild the lily and turn the ice cream in to Girl Scout Thin Mint cookie ice cream.I have a Cuisinart ice cream freezer with its own compressor so no ice and salt needed or a container to freeze. I let the ice cream base steep over night in my fridge. I made and extremely dark chocolate sauce. The next day I strained the base and poured it into the freezer can and turned it on. In about a half hour it was ready. It was still on the soft side as always. I broke up vanilla wafers and as I was putting the ice cream in the container for my freezer (refrig/freezer) layered in the broken cookies. That evening at dessert time I got the ic out, it had firmed up nicely and served scoops with the dark chocolate sauce. OMG! I'm certainly am going to be making this a few more times this summer while I have the mint.
