what to do with mini sweet peppers

Question

I was in Costco this weekend and saw a bag of these. They were multi-colored. They were so cute, I almost bought a bag. But I try not to buy things if I have nothing in mind for them cause then they're liable to get wasted. Any of you wonderful hounds have any ideas on what to do with these?

I've been buying these a lot recently. They are wonderful for stuffing and making a little tapa. I use them in salads and really they are the best just held by the stem and crunched into and eaten raw. Very sweet with a nice pepper flavor.

LOVE these mini sweet peppers and have been for several years that Costco has had them and they are great raw, dipped in Hummus, stuffed with goat cheese and then baked in the toaster with EVO, garlic and sea salt, half them and stuffed them with cream cheese/ fresh herbs...
Myriad of ways and they are healthy snacks and my dog, Kona is addicted to them too!

My wife makes a Japanese version of pepper steak with them.
She uses soy, mirin, sake and thinly sliced wagyu brisket. YUM!

We fill them with hummus as finger food. Used a Ziploc bag with a snipped tip as a pastry bag substitute to make it clean and easy.

I've stuffed them with a spicy beef and rice filling, a little cheese on top, some tomato sauce. Very pretty on the plate.

I usually grill them - they work really well this way, with a drizzle of balsamic or honey wine vinegar on them (SlideRidge Honey Wine Vinegar). I also make a Roasted Sweet Pepper and Bacon Jam from them. You read that right. Bacon ....
Today, I tossed a whole bag of them into the food processor - having sliced off the green stems, and a goodly amount of Asian sweet chili sauce, tomato paste, smoky bitter-sweet paprika, lemon juice and a splash of vinegar - voila! My own really super fast and easy Sweet Pepper Jam - to spoon over goat cheese, eggs, grilled asparagus etc.

I've stuffed them diced cucumber, feta and olive tossed in vinaigrette for a cute presentation of a greek salad. I also like to stuff a couple with hummus as part of my lunch with other chopped veg. and some crackers.

My son has been saying with me and I never had them before, Now I'm eating them in everything 3 times a week and sometimes raw right out of the bag.

Take some chorizo out of the casing, cook it pulse in blender to make it finer. cook red onions, corn poblanos, jalapenos, diced tomatoes, add shredded pepper jack cheese. stuff inside. Bake for 20 min. Serve with an avocado cream sauce as an app.

I know this response is way late, but I use these all kinds of ways. Mostly as a sort of cracker replacement because I don't eat grains. My favorite is slicing them in half and stuffing with tuna or egg salad.

I know some people mentioned you couldn't tell the difference if you chopped them up, but I find them quite sweeter than a regular sized pepper. Love these! I get so sad in the winter when they're not around :)

oh yeah, I've had them stuffed and broiled and other things, but really, they make a great snack food just as they are. just avoid the seeds at the top if you can.

My husband stuffed the mini peppers with mozzarella cheese, wrapped them in bacon, and grilled them until the bacon was done. Delicious!

I love these little peppers any way at all but the thing I have done with them that I liked best was that I put a layer of them in lasagna---several layers of meat sauce, one layer of ricotta beaten with a couple of eggs, and a layer of mini peppers (I sliced the stems off, split them in half, and steamed them briefly to soften a little). The peppers' bold pepper flavor really stood out.

Simple preparation. Toss with EVOO, minced garlic, S&P then 
toss on BBQ until charred but still crispy. Sometimes I add a drizzle of balsamic reduction to the EVOO, or dijon mustard.

In salads, you can identify mini peppers by slicing them across. They form a sort of three-leaf clover pattern if you can clean them but leave them whole. I slice them as thinly as possible; even when the clover ring breaks, it's still recognizable. For kids' snacks, I slice them thick enough to stand up to the dip (if any) they'll be using. They like them plain--slice thin, so they can eat them like popcorn or potato chips; with cheese--slice very thick, especially if using queso with salsa; with ranch--medium thick, dilute ranch dressing with a bit of milk to reduce the proportion of mayo to vegetable; etc. I find these babies a nuisance to prepare, but they're worth it because they're such a popular healthy snack and because they're so pretty in any green salad.
