What are some great things to do with incredibly fresh farm carrots?
My produce delivery program is going nuts with the carrots. I have to admit these are the best carrots I've ever tasted in my life, but I'm tiring of eating them raw. Too carroty. I think I'd like to try something like cole slaw, but heavy on the carrots. Maybe with raisins?
Any dish that's heavy in dishes would be greatly appreciated. I made a lamb stew and loaded it with carrots tonight. I might have to resort to curry soon. Anything else?
TIA!
(the delivery service is Farm Fresh to You, for those in the Bay Area).
