Milk suitable for cheese-making

I just got a cheese-making kit, and was wondering where to find milk suitable for use in the cheese making process. I believe the best milk foir this is stright out of the cow or goat or sheep, however, living in manhattan, we dont have those luxuries. Supposedly a decent substitute is non-homogenized or anything NOT ultra-pasteurized. Can anyone point me in the right direction here?
