miel de printempts definition?

With the help of a French-English dictionary, I know this means "honey of spring," but what does THAT mean?

My souvenir from a trip to Paris was six little jars of various honeys. I can figure out the source (heather, thyme, etc.) of all but this one. It is a creamy, spreadable honey that is somewhat pale in color and has a mild flavor.

Since I exhausted all of my nonexistent French just trying to buy these little suckers, and the salesman’s English was about as good as my French, asking at the store was not an option. It does make a lovely memory though…
