I grew up eating a salad from an old Betty Crocker cookbook, and it was perfect for an entire summertime meal when it heats up outside. It's almost like a cold casserole and has grated carrots, chopped celery and onions, mayo and either pieces of chicken or tuna--with shoestring potatoes on top. I made it last week with leftover grilled chicken, and it disappeared immediately. Does anyone else have suggestions for salads that can be eaten as an entire meal? Thank you!
