This is my go-to side when I am in a hurry:
1 can chicken or veg. broth
6 Tbsp. yellow cornmeanl
1/4 shredded cheese
In 1-quart microwave dish combein broth and cornmeal and stir to eliminate lumps. Cover and microwave on medium high for 4 to 5 minutes. Remove from microwave and stir again. Return to microwave, cover and cook another 4 to 5 minutes on medium high to high. Remove from microwave and stir in shredded cheddar, fontina, mozzarella or whatever cheese you like. Cover and let stand for 2 minutes.
