So today when I was thinning out my greens to be spaced 4-6" apart, I decided to taste the little seedlings. Um. Delicious. So the ones I pulled out became a microgreen salad that topped my chicken for dinner. Pretty cool & totally unexpected. I had thought those 1st little leaves wouldn't amount to much, but they had lots of flavor. It took a long time to get those darn things pinched off, cleaned & arranged though. I only cleaned 1/2 today, so will save the rest for tomorrow's dinner.
