Miami Area Must-Eat: Norman's or Somewhere Else?

I am a planning a trip to Miami. We will only be in town one or two nights, so I would like to eat somewhere special. Perhaps, somewhere that is (in some small way) representative of Miami cuisine, but also might be difficult to find elsewhere. Most importantly, it must be knock-your-socks-off good.

Although I was hoping to do the meal in South Beach, my research suggests that I may not find a meal that meets my criteria there.

Norman's is my leading candidate.

Others:

Azul
BlueSea
Elia
La Broche (though I am reluctant to go downtown)
