I live in LA and am hence constantly stealing Meyer lemons from people's trees, because I'm a normal person. If the landowner isn't gonna appreciate the awesomeness that is the Meyer lemon, someone must!
Anywhoo, I've tired of making Shaker Meyer Lemon Pies, because it's rather labor intensive and only uses up a few lemons at a time. So I thought--Meyer lemon marmalade! However, I refuse to deal with labor-intensive, water-bath-involving canning, since didn't we invent freezers and fridges to get past needing to do such silliness?
Hence, does anyone have a freezer jam recipe for Meyer lemon marmalade? I refuse to start boiling mason jars (or purchasing them in the first place), so I'm looking for one where I can throw the resulting jam into tupperware. How long will it last in the fridge? What are the odds that I will kill my friends and family members? Oh, and I'm fine with purchasing pectin, as I'm not purchasing cheesecloth to start tying up lemon seeds.
While we're at it, does anyone have a similar recipe for kumquats? I drive past a tree near me where the fruit are overhanging the sidewalk and hence FAIR GAME. I'm well-adjusted.
Oh, and in advance appreciation of your replies, here's the Meyer lemon pie recipe I use. Go with 3 medium sized lemons and two eggs. People will request it to the point that you get tired of making it.
