Mexican Rice

I am looking for recipe and preparation information about rice served at many Mexican restaurants where I have eaten. Some verions more successful than others but often a nice compliment to the spicy food that is at the center of the plate.

The version I am interested in is always somewhat dry and fluffy, is pink in color, and rather mild in flavor. It doesn't taste like tomato is a source of the red color and annato seems wrong also because the rice would be more yellow.
