When we visit the West Coast, one of our favorite parts of the meals at good Mexican places is the dish of spicy pickled carrots that are put out on the table with the chips and salsa when you sit down.
Obviously, these are in short supply in New Hampshire. Does anyone have a link to a recipe for these?
