Sorry to keep harping on same lines of query. I've developed something of a problem... Trying to work through the obsession.
Today I tried a taco de cecina. They describe cecina as salt beef. Is this just a preservation thing like jerky or salt cod or is there something else to it? If I were to buy it from a Mexican grocery, would it be something I could use as-is or would it need to be soaked like salt cod?
To me, it tasted like a taco de bisteck, but a little on the salty side.
