Mexican Cheeses for 3-Cheese Blend

I moved to a new state a while ago, and still find myself longing for the stuffed avocados from my favorite Mexican restaurant back home. I decided I wanted to try recreating them for dinner at home, but the one thing I'm unsure of is what kind of cheese to buy.

These avocados are cut in half, stuffed with sauteed onions & peppers and either shredded chicken or black beans (i plan on doing one of each). They are then topped with a shredded 3-cheese blend and put under a broiler to melt and brown the cheese, and garnished with pico de gallo.

I realize I could use any mix of cheeses such as cheddar, monterey jack or colby, but I was thinking of going for authentic Mexican cheeses (oaxaca, cotjita, etc). I'm not actually really familiar with those, just came across them when searching online, so I have no idea what would be best.

I've included a pic of the dish I'm trying to replicate. Any ideas are appreciated!
