Help with my menu for Saturday night casual dinner?

We have friends coming this weekend for a canine-related event. We'll be out on the field all day, so dinner needs to be relatively quick/easy. I will have a little time Friday evening to do prep.

Our friends love seafood, so I'll probably get some stone crab for them to munch while I make dinner.

I'm thinking of doing the shrimp and grits from Virginia Willis' BAYA. We love that recipe.
What to go with? I could do some collards in the crock pot, but will that be too much liquid on the same plate with the shrimp and grits? I also thought about fried green tomatoes, but that sounds like too much mess for what needs to be fairly quick dinner prep. I really am "stuck" for the sides.

And, I need an idea for a make-ahead or very easy dessert.

I usually have these dinners planned out weeks in advance, but this one jumped up on me!
