We're having someone to dinner tomorrow and, so far, I plan to make:
Cold Celery Soup
Butterflied Salmon filets with tomatoes & basil sauce(basically diced tomatoes sauteed in butter for about 30 seconds)and sauteed cucumber
Endive salad with blue cheese in an apple walnut vinaigrette.
So first, any suggestions? I always feel "weak" on putting together menus.
Second - for some reason, I've got it into my head to have peaches for dessert, but am always worried about them being ripe, but not mealy. Any suggestions? I found a recipe for poached peaches with a ginger zabaglione that sounds lovely, but you poach the peaches cold - I don't want to serve someone a mealy peach. Will be buying the peaches tonight, and would cook them in the morning.
