I recently posted an entry about Tio Pepe's – that retro, but in my view still wonderful, Spanish restaurant in downtown Baltimore. The responses made me realize that they have a large number of dishes that are not listed on the menu.
For example, I was there recently on a slow night and got to talking to the chef. I asked him about the appetizer of stuffed squid in its own ink. I've had it there once. It was fantastic.
He told me that on many nights, he has it but it rarely appears on the menu. In fact, he had it the very night I was there. As anyone who's been to Spain knows, it is a delicious dish. I'm going back soon to get the Tio's version.
So how many off-menu dishes can this group list for Tio Pepe's. I'm sure it will be helpful information for us all. Did someone say Grand Marnier souffle?
