In Memory of Ismail Merchant

Last night I made dinner using 2 recipes from Passionate Meals by Ismail Merchant (1/2 of the famous movie team of Merchant and Ivory who was also a great cook) who recently died. His book has been one of my favorite sources over the years and is covered with gravy stains and water marks.

I made a cod dish marinated in cilantro,tomatoes, jalapeno, ginger, onions and garlic (blendered). You leave the fish in this mix for about an hour, then drain and saute it. After it has cooked a bit, you pour the sauce over and cook until fish is done. Serve with the goopy sauce.

Also I made a pilaf (forgot which one - I can find it if you have or want to get the book) of basmati rice. Start by sauteeing a chopped up onion in a bit of butter, adding a small piece of cinnamon, several cloves, 6 or so whole cardomom and a few whole cumin seeds (my own addition) until onion is softened. Throw in a small handful of sultanas (I've also used plain raisins or currents)

I used 1 cup of rice and 1 and a half cups of water. Stir, cover and cook as for basmati rice - 15 minutes but keep checking.

Served with a coleslaw with a dressing of yoghurt/ lemon/crushed garlic/s&p/a bit of sugar.
