Memories of Chef Maxime...

Was discussing some favorite culinary memories with friends and came up with a few stories about Chef Maxime Ribera who was one of our leading French culinarians back in the 70's thru the early 90's. He came up from Manhattan's Café Argenteuil to open Auberge Argenteuil in Hartsdale, then went on to operate Maxime's in Granite Springs, Auberge Maxime in North Salem and Bistro Maxime's in Chappaqua. I used to swoon over his Lobster Napoleon and Crème Brulee before it all became so commonplace. And what a gentleman he was. If asked for a recipe from his vast Gallic repertoire he would always accommodate...
