Meat and Three Sides (but we just want the sides)

DH and I will be in NC for a little vacation in early April. We especially like the three sides part of the equation in meat + 3 sides options. We are totally fine with holes-in-the wall as long as they are clean and the sides are delicious. Can anyone recommend good places we should visit for 3 sides in these communities?

***New Bern area
***Raleigh-Durham area
***Asheville area
***Boone area

p.s. We do eat meat, but generally we enjoy the sides more than the meat. Although, come to think of it, some good bbq would be great too!
