meat carving ...class?

I made roast beef tonight, and it was very tasty, but it just underscored the point that I have *no idea* how to carve roast beef. I don't know how to carve a turkey either. I mean, ok, I can manage to get pieces off, but they're always too thick or lopsided, and it's just unaesthetic. I'm sure there are some amazing websites for learning this, and I'd love urls, but what I'd really love is for someone local to teach me. Is there such a thing as a meat carving class somewhere in the bay area? I don't even know if I'm using the right knife, and I don't think I use it right, and and and.....
