Meal Planning Abroad

Hi all,
I've been tasked (aka volunteered after a few glasses of wine) to plan the menu for a family gathering taking place in Central America over the holidays. We have some family members with gluten issues, some with dairy issues, all wanting to eat healthy(ish). Two days will be at the beach (plenty of access to fresh seafood), three days will be at a lake house. Unlike Mexico, their cuisine is NOT spicy and their tolerance of it is pretty low. Breakfasts are pretty easy, I'm really trying to focus on lunches/dinners/snacks. I am willing to bring SOME spices from the US, but prefer to keep it mostly local but with some exciting combinations. There will be 25 adults, 3 teenagers, and 3 kiddos under 6 (that will eat whatever is put in front of them). I'm looking for advice on great tasting recipes that are easily adaptable for a large crowd, taste great/keep well in hot weather, and offer some flexibility with respect to availability of ingredients, as well as any advice you all might have on logistics and coordination. I already have my spreadsheet and pinterest page full of ideas going :) .
