One Meal in NYC

I have read it seems like every post on this board. And I've been researching and looking for a while now, but I finally decided to just ask for thoughts. Here's my situation:

I am looking for one meal for myself and my wife. We are going to be in NYC (from LA) and can go out on either December 26th (Saturday) or December 27th (Sunday). We are looking for what I would describe as "fine dining." We've been to NYC a few times, been to EMP, Le Bernardin, Per Se, and some of the other heavy hitters. I tend to prefer more classic techniques, though we are willing to try just about anything out of the ordinary. Only thing I'd rule out is sushi, we love it, just not looking for it this trip (and LA has pretty solid sushi for any other time back at home).

As far as budget, ideally I'd like to stay at around 130-150 (or less?) for a tasting menu experience. If I can get out before tax/tip at around $500 for the two of us, I'll be happy. I've looked at a number of places, and am considering Dovetail, The Musket Room and Betony as viable options. Any thoughts on those three? Did I miss something somewhere that I should be looking at?
