Matzo Brei

Can anyone recommend places in Manhattan/Brooklyn for good matzo brei? The kind I prefer is when the matzo is soft and cut into small triangles and then fried together like scrambled eggs. Most places I've had the dish in Manhattan restaurants cook the matzo like it's one big lumpy pancake and it's often dry. My mother used to make it where matzo was dipped in egg & milk until it was soft and then fried it. The East Village places don't get it right and I've had it at the Stage Deli where it was very good, served with apple sauce, but they charged almost 11 bucks and I thought that was a bit overpriced for matzo. Any recommendations are appreciated.
