I held a wonderfully aromatic soup last night made with fresh matsutake mushrooms. It was served in a small teapot and I was instructed to open the lid, add a small amount of fresh lime juice to the pot, and pour the liquid into the small lid/cup. The aroma was intense and the liquid was intensely "umami." The pot contained an abundance of mushrooms, a small shrimp, a clam, and a few pieces of what I believe was dark chicken meat which I ate with chopsticks. $9.50
Does anyone know of other area Japanese restaurants serving matsutake? I would like to enjoy them in other preparations.
