Thanks to a mention by Parnassien we booked at 12 seat Matiere a on rue de Marie et Louise. This is a special and peculiar place: One long table d'chef; no choice menu altho you can take only the starter and main. Very precise cooking and plating. House made bread and compound butter. I saw nothing being cooked on a pan larger than 8". Sweet and personable reception.
I don't know the economics of such small scale but we wish him very well. This a very sincere kitchen. Anthony Courteille does put his heart on every plate.
