KAISEKI TASTING MENU AT MASA'S: Masa's restaurant, 648 Bush St. in San Francisco, is introducing a special tasting menu, modeled after the highly ritualized, highly stylized Japanese kaiseki meal. The $150-a-person menu, which will run from Jan. 20 through May 31 and change with the seasons, will include 10 to 12 courses with such luxurious ingredients as foie gras, lobster and truffles.

Executive chef Ron Siegel became enamored of Japanese cuisine when he first visited Japan to participate in the wildly popular TV cooking competition, ``Iron Chef.'' Siegel became the first U.S. chef ever to defeat an Iron Chef.

Kaiseki is a traditional meal made up of many small dishes that was served in the temples of Kyoto to accompany formal tea ceremonies. Masa's updated version will include matsutake mushroom broth, hamachi with ginger-orange marinade, spiny lobster carpaccio infused with lemon verbena, shabu shabu of beef rib-eye and black truffle risotto.
